Potato Pierogi with Farmer's Cheese, Caramelized Onions, Sour Cream & Chives

These hand-shaped pierogi are filled with farmers cheese and slow caramelized onions, boiled, then crisped in clarified butter until golden. A spoonful of sour cream and a sprinkle of fresh chives bring everything together.

Ingredients & Instructions

    • 2 c all-purpose flour
    • 1 tsp kosher salt
    • 1 large egg
    • 1/2 c sour cream
    • 3 tb unsalted butter, melted

    Caramelized Onions

    • 2 tb unsalted butter
    • 2 tb avocado oil
    • 3 yellow onions, sliced
    • kosher salt, to taste

    Filling

    • 2 c russet potato, peeled, boiled and riced
    • 3/4 c farmer’s cheese
    • 1 c sharp cheddar, shredded
    • 1/2 c caramelized onions
    • kosher salt and freshly cracked black pepper to taste

    • clarified butter, for frying
