Miso Braised Short Ribs with Garlic, Ginger, Lemongrass and Five Spice

- 3 lbs bone-in short ribs
- kosher salt
- white pepper, freshly cracked
- avocado oil, for searing
- 1 yellow onion, sliced
- 3 shallots, halved
- 1 head garlic, halved
- 1 (4 inch) piece ginger, sliced
- 1 stalk lemongrass, lightly smashed
- 1 3/4 tsp chinese five spice
- 1 small cinnamon stick
- 1 star anise pod
- 3-4 tb white miso paste
- 1/2 c shaoxing wine
- 1/3 c shoyu
- 2 tb mirin
- 3 tb wildflower honey
- 4 c chicken stock
- 1-2 tsp fish sauce, to finish the sauce
- scallions, thinly sliced
