My caesar salad, now I just need some truffle fries & a dirty martini 🍸
Dressing
- 1 egg yolk
- 2 garlic cloves
- 4 anchovies
- 1 tb dijon mustard
- 1 tsp worcestershire sauce
- 2 tb fresh lemon juice or more to taste
- 1 tb champagne vinegar
- 1/3 c parmesan
- 1/3 c avocado oil
- 1/4 c olive oil
- freshly ground black pepper
Garlic Lemony Breadcrumbs
- 2 tb olive oil
- 2/3 c panko breadcrumbs
- 1 garlic clove, grated
- 1 tsp fresh lemon zest
- 2 tb parsley, finely chopped
- kosher salt, to taste
Fried Capers
- 3 tb capers, drain and pat dry
- neutral oil, for frying
Salad
- 4 heads little gem lettuce
- parmigiano-reggiano
- pecorino romano
- freshly cracked black pepper
